Broccoli Salad

Broccoli Salad is one of those salads that is fresh and healthy yet still filling. I love how this particular salad hits the spot. With the broccoli, grapes, bacon crumbles, and almonds, it is sweet, salty, and savory all in one.

With this Broccoli Salad, you get your veggies, fruit, and nuts all in a single scoop! Add a few chunks of chicken breast to this Broccoli Salad and you have yourself an entire lunch using it as a Chicken Broccoli Salad or a Chicken Broccoli Salad Wrap.

Broccoli Salad
*Option - For a healthy lunch, add chunks of chicken breast, to make a cold chicken salad or wrap.
*Low or Non-fat mayo and sour cream can be substituted.

1/4 c onion diced small
3/4 c purple grape sliced in half
4 c broccoli cut up broke into small pieces. (Approx 1in X 1/2 inch)
1/2 c mayo
1/4 c sour cream
1 TB rice wine vinegar
1 1/2 TB sugar
1/3 c bacon crumbles (Approx 4 slices bacon cooked and crumbled)
1/3 c slivered almonds
Salt and Pepper to taste if desired.

-Toss onions, grapes, and broccoli in a bowl. Toss.
-In a separate bowl put the mayo, sour cream, rice wine vinegar, and sugar. Stir with a
  fork until completely combined.
-Scrape all of the mayo mixture into the bowl of broccoli mixture. Stir until combined.
-Store in fridge covered until ready to serve. (up to 6 hours)
-When ready serve, stir in the bacon and almonds.

*I always leave a few almonds and bacon crumbles to garnish top with too.
*In a pinch you could also substitute raisins for the grapes. But I prefer grapes.
