Fruit Parfaits

These fruit parfaits are a nice switch up from the regular high calorie chocolate dessert. They are light, healthy, fresh, and perfect for breakfast, lunch, brunch, snack time, or dessert! They seem so simple. They are simple. But they don't taste simple! That is what makes these so great! Everyone kept asking what the filling was. They loved it so much!

I made these fruit parfaits red, white, and blue with the upcoming Fourth of July in mind. I tell you what though, these little buggers are so good that I am making a habit out of this fruit parfait making stuff Fourth of July or not!

These keep well, covered, in a fridge for 2-3 days. I like to make them the day before or the morning of an event or party. I love the versatility of this recipe. Fruits, flavors of pudding, and size of portions can all be fiddled with to your liking.

Make these fun little red, white, and blue fruit parfaits for your Fourth of July weekend. And don't worry if you wind up making enough to feed an army. I did, and I was thankful time and again for 2-3 days afterwards, as breakfast and dessert were made a cinch;)




Fruit Parfaits
Makes approx 20 servings in 9oz cups

Ingredients
2-3 Cartons of Strawberries
3 Pints of Blueberries
3 Boxes of Cheesecake Instant Pudding
1 Quart milk - I used 1%. But you can use skim, whole, 2%, whatever you wish.
Whipped Cream or Cool Whip - fat free/sugar free if you wish

Directions
-Cut green tops off of strawberries.
-Wash strawberries and blueberries and lay them out to dry.
-Slice and dice the strawberries up into small pieces.
-Refrigerate fruit until ready to use.
-In your mixer or with a whisk and bowl, combine 3 boxes of cheesecake pudding powder
 and 1 quart of milk. (This is less milk than recommended on the package for the pudding
 but that is OK)
-Whip or whisk until set.
-Store the pudding in the fridge, covered, until ready to use.
-When you are ready to assemble the parfait, layer strawberries, then pudding, then
 blueberries. (Red, White, and Blue)
-I used about 1/3 cup strawberries, 1/2 cup pudding, 1/3 cup blueberries.
-Top with a dollop of whipped cream or cool whip, top with an additional blueberry, and
 wallah!
-Red, White, and Blue Fruit Parfaits!
-For me this made about 20 parfaits in 9oz clear plastic cups.
-I only had 10 people and 2 other desserts...ooops! I had extras to enjoy for the next couple
 days. And I did enjoy:)
