Bacon and Blue Cheese Toaster Oven Potatoes

Because I live in Florida, we are all backwards up in here! Our BBQ season is flip flopped with the majority of the United States. We do our outdoor grilling in the winter time. Summer is just too darn hot to be grillin'. I swear, if I cracked an egg out on the tiles by my pool mid afternoon on any given day in August it would be cooked to a perfect over medium before I had time to grab a plate and fork.

Realizing I am the minority when it comes to grilling in the dead of Winter, I have saved this recipe for you till now. Why you say? Because it is PERFECT for steak and burger season!

Really, Bacon and Blue Cheese Toaster Oven Potatoes are great for anytime of the year, but for some reason these remind me of sweet summer time in Montana. Good ole' meat and potatoes. Perfectly paired are the bacon, blue cheese, and delicately crisp taters.

Bacon and Blue Cheese Toaster Oven Potatoes

Ingredients
2 cups of red potatoes diced small
1/2-3/4 tsp seasoning salt - I like Natures Season Salt
1/2-3/4 tsp garlic powder
3 slices of Thick Cut Natural Hickory Smoked Bacon or bacon of your choice
1/4 cup or so of Crumbled Blue Cheese

Directions
Preheat Toaster Oven to 450 degrees.

If bacon isn't already cooked, cook and set aside on a paper towel.

When the bacon is cooled off, crumble and set aside.

Slice and Dice small red potatoes so that they are about the size of dice or even smaller if you wish.

In a bowl sprinkle the potatoes with the seasoning salt and garlic.

Toss to distribute seasonings throughout the potatoes.

Spray toaster oven baking sheet with Pam.

Lay potatoes evenly over the toaster oven pan.

Spray a thin layer of Pam over the top of the potatoes.

Pop them in the 450 degree toaster oven for 15 minutes.

Toss, Turn, and stir the potatoes and then pop back in the oven again for 5-10 more minutes. Check the biggest potato or two by poking with a fork. If the fork easily pokes through, they are done.

When the potatoes pass the poke test, toss them with 1/2 the amount of crumbled blue cheese, and half the amount of crumbled bacon and place on a beautiful sering dish.

Next top the potatoes with the remaining blue cheese and bacon crumbles.

At this point either pop the potatoes and serving dish in the toaster oven for 2-3 minutes on warm to heat bacon and melt cheese a bit, or pop it in the microwave for 30-60 seconds.

 Suggestions for garnishing include minced green onions, ranch dressing, ketchup, and/or Fresh ground black pepper.
