Lemon Muddy Buddies
Muddie Buddies are like Pringles...And everything else enjoyable in life. Once you pop you can't stop! As if regular ole' Puppy Chow wasn't sinful enough, I now bring to you Lemon Muddies Buddies! Just in time to put a little zing in your Spring. The perfect amount of citrus... Not overwhelming but definitely there!
I could not stop popping these. They were way too convenient and very addicting. I suggest you plan who you can give some away to before you make them. Otherwise you will just eat them all yourself. These are dangerously delicious.
Question - When was Puppy Chow renamed Muddy Buddies? Why was Puppy Chow renamed Muddy Buddies? Not like it matters. I am just curious as to when and why. If anyone knows, please do tell. All in all they are the same and I still love Puppy Chow...er...ah...Muddy Buddies...er....whatever.
I got this recipe from the Just A Pinch Recipe Club. I had to tweak the measurements a tinch to suit my lemon loving taste buds.
Try these Lemon Muddy Buddies for those Lemon Lovers in your life:)
Lemon Muddy Buddies
Slightly adapted from Just A Pinch Recipe Club
9 cups - Rice Chex Cereal
1 1/4 cup- White Chocolate Chips
1/4 cup - Butter
6 tsp - Grated Lemon Peel
1 TB - Lemon Juice
1 tsp - Lemon Extract
3 1/2 c Powdered Sugar
-Measure cereal out into a huge bowl. Set aside.
-In a microwave safe bowl toss the chips, butter, lemon peel, and lemon juice, and lemon
-Microwave for 1 minute. Stir.
-Microwave for 30 seconds. Stir vigorously.
-If after stirring vigorously it is still not melted to smooth microwave in 15 sec intervals
with vigorous stirring in between until smooth and melted.
-When mixture is totally melted and smooth, drizzle over the cereal.
-Lightly stir and toss cereal until it is coated well and melted mixture is evenly distributed
-Choose a double bagged brown bag or 2 gallon Ziploc.
-Pour half the powdered sugar into the bag.
-Put the coated cereal mixture into the doubled brown bag or Ziploc as well.
-Top with last half of powdered sugar.
-Close top of bag securely and lightly shake and toss until the cereal is coated well with
-Pour back into big bowl and if you think there is more powdered sugar that could stick,
lightly and gently use a spatula to toss it around a bit.
-Pour the Lemon Muddy Buddies onto a sheet of waxed paper,, old news paper, or in my
case I ripped open the brown paper bag, laid it flat, and poured them onto that.
-When they are cooled completely, store them in an airtight container.
