How To Toast Coconut

Preheat oven to 350 degrees.
Spread 1/2 of a 14oz bag of sweetened coconut flakes onto a pizza pan or cookie sheet.
I used a non-stick pizza pan.
With the oven rack in the center position, place pan in the oven uncovered.
Bake for 5 minutes.
Stir.
Bake another 5 minutes.
If it is golden it is done.
Mine was not so I baked it for an additional 3 minutes.
When golden, remove from oven and let sit until cooled.
Store in an airtight container. I store mine in an airtight recycled glass pickle jar in the pantry.

*Baking time varies depending on the accuracy of your oven temperature, and also how thinly the coconut is laid out over the baking sheet.

*Watch coconut carefully throughout the last few minutes of baking. Once it starts to turn color it darkens quickly.

What is your favorite way to enjoy coconut?
