Fresh Summer Salad


Fresh Summer Salad

2 tomatoes off of vine about the size of a tennis ball chopped into small chunks
1 purple onion about the size of a tennis ball chopped small
1 cucumber about 10 inches long or so diced
1 small clove of garlic very finely minced
1 tsp fresh finely chopped dill
1 tbsp fresh chopped oregano
1 1/2 tbsp fresh chopped parsley
1 tbsp olive oil
1 tsp apple cinder vinegar
salt and pepper to taste
Mix it up and let it sit in the fridge at least an hour
This is so good, and so healthy! I ate so much my stomach hurt, and then I went back for more....lol
