Banana Bread {can be sugar-free :o)}

So it is not much, but I am taking a stab a little burning (a few of you can get that insider, new microwave anyone?) Anywho I ran across an awesome old lady type banana cread recipe and found a way to make it more of less sugarfree, wootwoot. here it is---

Banana Bread Recipe:

Ingredients
3 or 4 ripe bananas, smashed
1/3 cup melted butter (i do more---like a lot more)
1 cup sugar (can easily reduce to 3/4 cup) (to make sugar-free I used 1 tsp stevia instead of sugar)
1 egg, beaten
1 teaspoon vanilla (i use about double the amount here)
1 teaspoon baking soda
Pinch of salt
1 1/2 cups of all-purpose flour (can use WW, if you are used to that hardy taste if not---stick with the reg.)


Method
No need for a mixer for this recipe. Preheat the oven to 350°F (175°C). With a wooden spoon, mix butter into the mashed bananas in a large mixing bowl. Mix in the sugar, egg, and vanilla. Sprinkle the baking soda and salt over the mixture and mix in. Add the flour last, mix. Pour mixture into a buttered 4x8 inch loaf pan. Bake for 1 hour (mine has been finishing around 40 mins, but I do have a spastic oven). Cool on a rack. Remove from pan and slice to serve.
