Sweet Potato Casserole

Sweet Potato Casserole

This is a tasty dish. It would be good for a holiday meal, or great with any dinner. It almost serves as a dessert due to it's sweetness:)

Sweet Potato Casserole

3 large sweet potatoes
1 cup sugar
2 eggs
1 stick butter, softened
2 tsp. vanilla extract

Crunch Topping:
1/3 cup melted butter
1/3 cup flour
1 cup dark brown sugar or regular....doesn't really matter
1 cup chopped pecans
1 tblsp. cinnamon

Boil potatoes until tender.

Take skin off when cool enough to handle.

Cut into smaller pieces.

Put in a large bowl and whip them until fluffy.

Add all other ingredients.

Pour into one big pan, or if serving 2-3 people, pour into 3 bread pans....baking one and freezing the other 2 for a different day.

Combine crunch topping in a bowl like apple crisp topping. It will look like it isn't chunky enough,...but it is:)

Top potato mixture in pan/pans with the crunch topping.

Bake at 350 uncovered for 45 minutes. It looks too dark especially if you use DARK brown sugar

Take out of oven and let sit 10-15 minutes before serving...this allows topping to crisp a little more, and potato mixture to cool enough to eat and also set a little.
