Not Your Bland Ole' Stuffed Pepper Recipe :)

If you don't like a lil crunch to your cooked red peppers, boil a few minutes b4 starting this recipe.
1/3 cup of basmati rice - (1 1/2 cup cooked fluffy.)
1/2 lb. ground beef
1/2 lb. ground Jimmy Dean Hot Sausage (1/2 tube)
1 good sized clove of garlic
1 cup fine chopped onion
1/2 - 1 jalepeno finely chopped 1/2 is mild if for children.
16 oz Salsa
1 cup corn
3/4 cup shredded cheese of choice.
about 6 red bell peppers

350 degree oven.

Cut tops off of red peppers. Get seeds out. If you have a few peppers that won't stand, carefully even out bottom of pepper w/o making a hole in the bottom. Set aside.

Cook rice according to directions

Brown beef and sausage. Drain.

Throw onion, jalepeno, and garlic in with meat for a few minutes of cooking after draining.

Throw rice, meat mixture, 10 oz of salsa, and corn together. Stir. (everything but cheese)

Spoon about a cup of mixture into each red pepper. Leave about 1/4 - 1/8 of an inch to top open so there is no over flow.

With remaining salsa, spoon about 1oz on top of each rice mixture filled pepper. Spread thinly across top.

Bake in covered glass dish, or cover with tin foil.
Cover tightly and bake 45 minutes.

Uncover and bake 15 minutes sprinkling cheese on top the last 5.

  1. I am making these for the boys tonight. Probably will wince at the cost of peppers, and they will most assuredly be green. Red ones will run 3 or 4 bucks apiece. I can just see you shopping for peppers, and checking if they stand as part of the selection process. love and miss you. Mom
